Seafood Recipe: Crab Cakes

Ok. This is a really different recipe. I have always wanted to try homemade crab cakes, and HcG might not be the best time! However, crab IS definitely allowed!

This recipe is not my own but is an amalgamation of several recipes I have come across along with a regular crab cake recipe that hasn't been downsized for HcG. As is my curse, I can't seem to stick with a recipe!

Ingredients:
4 ounces of crab (or crab imitation, but the real stuff is much better)
1 garlic clove sliced into several slivers
2 pearl onions minced as best as you can
1⁄4 tsp. lemon zest (I love the added flavor but don't like putting in too much. Do according to taste)
A pinch salt
Pepper to taste
2 tsp. lemon juice

Directions:
1. Preheat oven to 350 degrees.
2. Mix all of the ingredients together in a small bowl.
3. Split the mix in half and form into hamburger like patties. You can add additional flavorings here like a bit more pepper, cayenne, etc. I love adding a touch of smoked paprika!
4. Place these little crab cakes onto a tinfoil lined cookie sheet. Bake these babies for 15 minutes or until golden brown. (Keep an eye on these suckers! I let mine go too long and they turned out extra done!)
